India’s ‘Macaron Queen’ Pooja Dhingra, the owner at Le 15 Patisserie has undoubtedly redefined pastry-making. She has infact turned some of the best looks from the Cannes red carpet into delightful cakes and macarons.

So what inspired Dhingra to take up culinary arts and baking?
Pooja Dhingra’s first memory of baking is when she was six years old with her aunt who taught her how to make brownies. “I continued to bake for friends and family. Every weekend I would make goodies and take them to school,” says Pooja.

Seems she wanted to do law, but soon realised it wasn’t her cup of tea. “I thought I wanted to be a lawyer and joined Law School. That lasted for exactly 2 weeks. I realized that law wasn’t for me and moved to Switzerland to study hospitality management at Cesar Ritz Colleges”, says the patisserie owner.
This led her to move to the Le Cordon Bleu, one of the best schools for culinary arts and hospitality, to study and finally get a diploma in French pastry. Apparently, she had never seen a macaron before she saw it in France. And that was the day, when she decided to bring macarons to India.

She then started baking from home with the help of couple of her friends from culinary school. At 23, she was ready to start the entrepreneurial journey. She set her first pastry outlet Le 15 Patisserie in 2010. It is really difficult for a female to find a place in male dominated industry. Still, with her mantra to keep going on and tackle anything that comes in her way, she has emerged successful in setting up 4 Patisserie outlets in Mumbai, which will soon turn to 6!
When asked about her source of inspiration which boosts her passion, she says, “I am most inspired when I travel. A trip to Japan led to our green tea collection and a holiday in New York led to Cheesecake Week at Le15.”
